Three Greens Salad

One of my newest [and favorite] concoctions is this little beauty I call Three Greens Salad. It's so simple to prepare and filled with so many ingredients including three different types of greens. The bold flavor and crunch of kale, spinach, and basil will really wake up your taste buds, while the blackberries and apples will balance the flavors. I paired my salad with a black and green olive tapenade over sesame crostinis for a sweet and savory punch. 




Handful kale, chopped

Handful basil, chopped

Handful spinach, chopped

One Fuji apple

Handful baby carrots

1 cup grape tomatoes, chopped

1.5 cups blackberries

Handful almonds

Toscano Cheese dusted with Cinnamon (Trader Joe's), cut in to cubes

Tessemae Cracked Pepper with Whole Lemon dressing (Whole Foods Market) 



1. Place the three chopped greens in a large bowl. Add the apples, carrots, tomatoes, almonds, and blackberries.

2. Toss to combine. 

3. Add the cheese. Drizzle the dressing (to your liking). Serve immediately.
