Amaretti Cookies

Let's get one thing straight: I'm no baker. Whenever I do fantasize about the fanciest of baked goods, I find myself evaluating my desire to work for a lavish bite, and end up making something requiring less than 5 minutes of my time, yet equally as heavenly.

In the spirit of letting it be what it is, I wanted to share this super quick and easy Amaretti Cookie recipe, which only contains 3 major ingredients! Did I just do the impossible? I think so!

P.S- I used dark chocolate with sea salt as my choice of drizzler but you can tailor this to whatever you have on hand (i.e add cranberries or drizzle with white chocolate).


3 cups almond, ground

1 cup sugar

3 egg whites

1 tsp almond extract

1 square of dark chocolate with sea salt (optional)


1. Whip egg whites with a hand mixer until peaks form

2. Grind almonds in a food processor until very soft. Then add sugar and continue to grind. Add whipped egg whites and almond extract, and grind until a smooth dough forms

3. Using a small ice cream scooper, scoop dough on to a cookie sheet lined with parchment paper. Bake the cookies at 300°F for 20 minutes

4. Melt a dark chocolate square in the microwave until it's turned completely liquid. Once the cookies are done and cooled, drizzle the melted chocolate over them
