I promise this breakfast dish isn't as indulgent as it sounds, but yes- it's definitely as tasty as it sounds. For whatever reason, I always have this crazy itch of having fun and being innovative with food. I'm also one that likes to beat the regular breakfast rotation since it can get repetitive at times.
So as we all know, oatmeal is low in calories and fat, and high in protein and fiber, providing you the energy you need to start your day. A healthy, nutrient rich breakfast that both tastes good and does your body good? Sounds like the perfect fit for me!
1/2 cup rolled oats
1/4 cup milk
1/2 tsp cinnamon
1 tsp brown sugar
1/2 apple, chopped into cubes
1 tsp chia seeds
1 tsp maple syrup for drizzling (optional)
1/2 tsp pure vanilla extract
1. Preheat oven to 375 F
2. Combine all ingredients in a bowl and mix well
3. Lightly spray ramekins with cooking spray. Scoop mixture in to ramekins
4. Bake for 15 minutes, or until golden. Then broil for an additional 2 minutes for more browning
